Ingredients
- 236ml Water
- 110g Unsalted Butter
- 1 Tbsp Salt
- 140g Flour
- 5 Large Eggs
- 140g Grated Cheese
- Pinch of salt
Method
- Bring the water, butter and salt to the boil.
- Add the flour and cook out for 4 mins, beating all of the time.
- Add the cheese.
- Allow to cool slightly then beat in the eggs.
- Pipe onto silicone paper and bake at 180°C until golden brown.
Cheese Filling
Ingredients
- 55g Unsalted Butter
- 55g Flour
- 500ml Full Fat Milk
- 6tbs Double Cream
- 50g Grated Gruyère
Method
- Place the butter into a saucepan.
- Now add the flour and cook gently for 30 seconds.
- Add the milk stirring the sauce until thick. Continue cooking for a few minutes, then add the cheese.
- Allow to cool slighlty and place into a piping bag.
- Make a small hole in the gourgere and fill with the filling.
