Gruyere Gourgeres with Chilli Jam

Serves 4

Ingredients

  • 236ml Water
  • 110g Unsalted Butter
  • 1 Tbsp Salt
  • 140g Flour
  • 5 Large Eggs
  • 140g Grated Cheese
  • Pinch of salt

Method

  1. Bring the water, butter and salt to the boil.
  2. Add the flour and cook out for 4 mins, beating all of the time.
  3. Add the cheese.
  4. Allow to cool slightly then beat in the eggs.
  5. Pipe onto silicone paper and bake at 180°C until golden brown.

Cheese Filling

Ingredients

  • 55g Unsalted Butter
  • 55g Flour
  • 500ml Full Fat Milk
  • 6tbs Double Cream
  • 50g Grated Gruyère

Method

  1. Place the butter into a saucepan.
  2. Now add the flour and cook gently for 30 seconds.
  3. Add the milk stirring the sauce until thick. Continue cooking for a few minutes, then add the cheese.
  4. Allow to cool slighlty and place into a piping bag.
  5. Make a small hole in the gourgere and fill with the filling.
